I love tacos! They are such an easy meal to put together, and everybody loves them. It is particularly welcome on busy weeknights. In the morning I prepare my Crock Pot Dry Rub Mexican Pork, and let the magical crock pot do what it does best.  Later, I just chop the vegetables when it?s time to eat. You just set out all the fixings and everyone can make their own taco. Plus, I always have enough meat leftover to prepare another easy meal the next night.

The fun part is to set out an assortment of taco accompaniments, so everyone has plenty of nourishing options. For me, I swoon over the combination of pork and avocado.  Yep, I sure do love tacos! Easy Crock Pot Pork Tacos   Save Print Prep time 25 mins Cook time 4 hours Total time 4 hours 25 mins   Author: Susan Recipe type: Lunch, Dinner, Quick and Easy Cuisine: Mexican Serves: 8 servings Ingredients Crock Pot Dry Rub Mexican Pork recipe: 2 tablespoons cumin 1 tablespoon chili powder 2 tablespoons oregano 2 tablespoons garlic powder 1 tablespoon salt ½ tablespoon pepper 1 (4-lb.) bone-in pork shoulder roast (Boston butt) 2 jars(16oz) La Victoria Thick 'N Chunky Salsa Verde Salsas Mild Corn or Flour tortillas-whichever you prefer; warm in the microwave 30 seconds or in the oven covered in foil at 350° for 15 minutes. Topping Suggestions Shredded Cheddar or Mexican Blend Cheese Chopped Cilantro Sliced Avocado Chopped Onion Chopped iceberg lettuce Chopped tomatoes Diced green jalapenos-because of Brandon Sofrito Salsa or homemade salsa Sour cream Lime wedges Hot sauce Instructions Combine cumin, chili powder, oregano, garlic powder, salt and pepper in a small bowl. Sprinkle the mixture evenly all over the pork roast, pressing it into the meat. Cook roast in hot oil in a large skillet over medium-high heat 3 minutes on each side or until lightly browned. Transfer pork to a 6-qt. slow cooker, and pour the Salsa Verde jars over the meat. Cover and cook on High for 4-5 hours. Drain and shred the meat.
