I was recently sent the most amazing and beautiful Lagostina Martellata Hammered Copper Pastaiola Set. You can’t beat food blogger perks! The pot I have always cooked my pasta in, has most definitely seen better days. I was so excited to cook pasta in my new pastaiola set and to retire my old pasta pot.

My son loves alfredo sauce but I’ve never tried making it before so I decided to give it a try. I used the America’s Test Kitchen recipe for alfredo sauce and it did not disappoint. To be honest, I’ve never been disappointed in their recipes. The sauce took only about 15 minutes to make and it was rich, creamy, and so decadent. I cooked some fettucine in my new copper pastaiola set and it was perfectly cooked. I loved how durable and well made both the coppered pot and the steel strainer are, and I absolutely loved the convenience of the removable strainer. It was so much easier to deal with than trying to pour hot boiling water into a colander in my sink and made no mess. Not only is this pastailoa set incredibly well made and solid, it is absolutely stunning too. I love having beautiful quality pieces of cookware that will last forever and this pot is no exception.
Heat one cup of the heavy cream in a heavy saucepan over medium low heat until at a simmer. Simmer for 12-15 minutes, stirring often, until it has reduced to about 2/3 cup. Remove from the heat and add the remaining 1/2 cup heavy cream. Stir to combine then season with a bit of sea salt and freshly cracked pepper, to taste along with a pinch of freshly grated nutmeg.
While the cream is reducing, heat water in the Lagostina Martellata Hammered Copper Pastaiola Set until boiling. Season the water with sea salt then add the fettucine; cook per instructions until just shy of al dente. Drain, reserving 1/4 cup of pasta water.

Meanwhile, return the cream mixture to a simmer over medium-high heat; reduce heat to low then add the drained pasta and the parmesan cheese. Cook over low heat, tossing the pasta with tongs to combine, until the cheese is melted, the sauce has coated the pasta, and the pasta is al dente, 1-2 minutes. Stir in the reserved cooking water, if needed. Set aside to allow to thicken for a 1-2 minutes. Toss again then serve in warmed bowls so the sauce stays nice and creamy. Season with a bit more freshly cracked black pepper. Enjoy.
