I could eat this recipe every single day. What’s not to love – crisp garlicky bread slathered with some creamy brie then topped with a dollop of the most delicious sweet & spicy tomato jam. I first had this combination at a restaurant my husband and I used to frequent years ago on special date nights and it was usually my favorite part of our meal. I am so glad I finally tried making tomato jam just so I could have this garlic crostini with brie and sweet & spicy tomato jam again. I just love the combination of flavors and textures.

Allow brie to come to room temperature for a few hours before making this recipe.
Preheat the oven to 400 degrees. Slice the baguette thinly then brush each piece with a bit of olive oil, to taste. Place into the oven and bake for 5-7 minutes or until crisp and golden brown.
Lightly rub the raw garlic over the top of each crostini; place onto a serving plate.
Pour some of the tomato jam into a small dish. If it’s cold, heat in the microwave for a few seconds to warm up. Place the brie on a serving plate. Spread some cheese on the garlic crostini followed by a dollop of tomato jam. Enjoy.
