I can’t believe I have never thought to marinate my tomatoes before! These tomato slices were the perfect side dish for dinner on this busy and HOT 90 degree day. I didn’t want to heat up the house too much so a cold side dish was a must when I was planning dinner. I ran across a recipes on eatwell101 that sounded perfectly delicious and it was! These marinated tomatoes with mozzarella disappeared quickly and all of us thought they were delicious. The herbs gave such a great flavor and the balsamic added the perfect amount of tangy sweet goodness and I loved the creamy bits of mozzarella. If you have a ton of fresh garden tomatoes – try marinating them!

Cut the tomatoes into thick slices and arrange in a single layer in a large shallow dish.
Combine the olive oil, balsamic vinegar, shallot, garlic, parsley, basil, oregano, and honey together in a bowl; whisk until well combined. Season with sea salt and freshly cracked pepper, to taste.
Pour the vinaigrette evenly over the tomato slices. Cover with plastic wrap and set aside on the counter for 1-2 hours. Serve with mozzarella bits on top and season with a bit more freshly cracked pepper, to taste. Enjoy.
