I am so thankful it has finally started to cool down and sprinkle some rain here in Oregon – we sure could use it! I woke up today craving some comfort food so I decided to look through some of my favorite cookbooks to find some ideas. I found an America’s Test Kitchen recipe for this slow-simmered bolognese sauce that sounded amazing and I knew it would be terrific over the rigatoni I had recently picked up from the grocery store. The sauce takes four hours to prepare so make this recipe on a day you don’t have to rush. I simmered the meat and veggies in the milk until evaporated, followed by simmering in wine until evaporated, then finally simmered with diced tomatoes and juice until evaporated – a total of four hours. The house smelled incredible and I loved the whole process of cooking this recipe. I adapted the recipe just a bit by using only beef & pork instead of equal parts beef, veal, and pork. I also added a pinch of crushed red pepper flakes, one clove of minced garlic, and I seasoned it with black pepper, other than that kept it the same.
